Personally, I like mine well done, and it’s brought tears to a chefs eyes, however if it’s a decent cut, steak is usually more tender the less time it is cooked.
For one inch steaks on a medium high heat use the following times, cook longer if thicker. The outside will always be a grey-brown.
Medium well, cook 11-12 mins light pink in center.
Medium, cook 9-10 mins pink in center also hot.
Medium rare, cook 7-8 mins, red warm center.
Rare, cook for 5 mins. The middle remains red and has a warm center.
