Tapas on Sunday – Chorizo with Chickpeas

Tapas simply put, are a snack eaten between meals usually served with wine or sherry which originated in Spain. Tapas are tasty munchies served in bars to carry you through to dinner which in Spain can be around 9pm and beyond. My husband loves to cook and did three. This is one.

Chorizo with Chickpeas

1 cup cooked chickpeas
1 Chorizo sausage thinly sliced
2 Cloves of garlic chopped
Olive oil
Fresh parsley

Add olive oil to small pan and heat, add the garlic and cook gently for one minute. Add the chorizo to cook approx five minutes, now add the chickpeas, move everything around in the pan until it is all heated through and serve. Add fresh parsley to garnish and some good bread. Enjoy.
