I am going on a course tomorrow and while getting the things I needed together, I realized that I had nothing portable for a mid morning snack. A quick sort through the recipe box and I found this one for granola bars, I did not have all the ingredients in the recipe so I improvised. This was quicker than going to the store as well as being cheaper and healthier.
4 CUPS ROLLED OATS, 1/2 CUP HONEY OR MAPLE SYRUP, (YOU MAY NEED A LITTLE MORE) 1 CUP SEEDS OR NUTS, ANY KIND YOU LIKE, 1 CUP OF DRIED FRUIT, AGAIN ANY KIND, 1/2 CUP CHOCOLATE CHIPS, AGAIN ANY KIND.
MIX ALL THE DRY INGREDIENTS TOGETHER, THEN ADD HONEY OR MAPLE SYRUP. THIS IS TRICKY TO MIX WELL. ONCE DONE PRESS INTO A GREASED 9 X 13 PAN OR IF YOU PREFER USE SOME PARCHMENT PAPER AS A LINER. COOK AT 350% FOR 20 MINUTES FOR CHEWY, OR 25 MINUTES FOR CRUNCHIER ONES. CUT INTO BARS. THERE WILL BE SOME CRUMBS FROM CUTTING, SAVE THESE AND USE AS A TOPPING FOR YOGURT.
