Not quite compote, and not quite jam, as no pectin added, this variation happened by accident when I left some apricots on low to cook, an hour later I had this lovely jellied compote. I popped it into a large mason jar, you can see how it clings to the glass, and have been enjoying on plain Balkan and Greek yoghurt, it’s really delicious as a dessert, (add some crumbled cookies if you want) as a snack or for breakfast.
